Avocado White Bean Spread

A luscious blend of ripe avocados and protein-packed white beans. Perfect as a versatile spread for sandwiches or a delightful dip for crunchy veggies and crackers, this spread adds a nutritious and flavorful touch to your snacking or mealtime indulgence.

Ingredients
  • 1 large avocado
  • 1 14oz can(s) cannellini beans drained and rinsed
  • 1 cup(s) fresh parsley (plus more for garnish)
  • 2 limes juiced
  • 1/4 cup(s) olive oil
  • salt & black pepper to taste
Instructions
  • Add the avocado, cannellini beans, parsley, lime juice and olive oil to a food processor, and blitz until smooth. Season to taste with salt and pepper.
  • Garnish with a little more parsley and enjoy as a dip or spread.
Notes
For oil-free: simply omit the oil and substitute with 1/4 cup liquid from the can of cannellini beans.
