Avocado White Bean Spread
A luscious blend of ripe avocados and protein-packed white beans. Perfect as a versatile spread for sandwiches or a delightful dip for crunchy veggies and crackers, this spread adds a nutritious and flavorful touch to your snacking or mealtime indulgence.

Ingredients
- 1 large avocado
- 1 14oz can(s) cannellini beans drained and rinsed
- 1 cup(s) fresh parsley (plus more for garnish)
- 2 limes juiced
- 1/4 cup(s) olive oil
- salt & black pepper to taste
Instructions
- Add the avocado, cannellini beans, parsley, lime juice and olive oil to a food processor, and blitz until smooth. Season to taste with salt and pepper.
- Garnish with a little more parsley and enjoy as a dip or spread.
Notes
For oil-free: simply omit the oil and substitute with 1/4 cup liquid from the can of cannellini beans.
