Miso Glazed Carrots

A tasty easy-to-make side dish (that's so yummy it might just become the star of the plate)!

Ingredients
  • 2 lbs carrots peeled and left whole
  • 2 tablespoon(s) olive oil
  • salt (to taste)
For the glaze:
Instructions
  • Preheat the oven to 350F (180C). Line a baking sheet with parchment paper.
  • Place the carrots on the baking sheet, drizzle with olive oil, and season with salt. Place the baking sheet into the oven and roast the carrots for 20 minutes.
  • Make the glaze, by mixing all the ingredients for the glaze together in a bowl.
  • Once the carrots have cooked, remove the baking sheet from the oven and brush over the glaze. Return the carrots to the oven and roast for a further 20 minutes, until the carrots are tender and lightly caramelized. Serve warm as a side dish.
