Tahini Walnut Blondies
These chewy, nutty blondies are made with ripe bananas, tahini, and a mix of maple syrup and coconut sugar for natural sweetness. Walnuts add crunch, while sesame seeds give a toasty finish. Theyโre easy to make in one bowl and bake up into a soft, flavorful treat that keeps well for snacks or dessert.
Servings:
Ingredients
- 2 medium ripe bananas mashed (about 1 cup / 225 g)
- ยผ cup(s) tahini

- 1 teaspoon(s) vanilla extract
- ยพ teaspoon(s) baking powder
- ยผ teaspoon(s) baking soda
- 1 cup(s) all-purpose flour
- ยผ teaspoon(s) salt
Instructions
- Preheat the oven: Preheat oven to 340ยฐF (170ยฐC). Line an 8ร8-inch (20ร20 cm) baking pan with parchment paper.
- Make the wet mixture: In a large mixing bowl, mash the bananas until smooth. Whisk in the tahini, plant-based milk, maple syrup, coconut sugar, and vanilla until well combined.

- Combine: Fold the dry mixture into the wet ingredients until just combined (do not overmix). Stir in the walnuts.
- Bake: Spread the batter evenly in the prepared pan. Sprinkle the top with sesame seeds. Bake for 20โ25 minutes, until golden and a toothpick inserted into the center comes out mostly clean (a few moist crumbs are fine).
- Cool and slice: Let cool completely in the pan before cutting into 9 squares.
Notes
Storage: Keeps in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week. Freeze for up to 2 months.
Nut-free option: Swap walnuts for pumpkin seeds or sunflower seeds.
Texture tip: For fudgier blondies, underbake slightly and let cool fully before slicing.
Flavor boost: Add a pinch of cinnamon or cardamom to the dry ingredients for warmth.
Gluten-free option: Replace the all-purpose flour with a 1:1 gluten-free all-purpose baking blend that contains xanthan gum (to help bind).
