Spiral Sweet Potato Bake

Ingredients
- 2 1/2 pound sweet potatoes cut into 1/8" (3 - 4 mm) slices
- 2 tablespoon(s) vegan butter melted
- 2 tablespoon(s) olive oil
- 2 cloves garlic minced or pressed
- 1 tablespoon(s) fresh rosemary finely chopped
- salt & pepper to taste
Instructions
- Preheat the oven to 350ยฐF (180ยฐC).
- Place the sweet potato slices in a large bowl. Drizzle with the melted butter and 1 tablespoon of the olive oil. Add the garlic, rosemary, and season with salt and pepper. Toss until the potatoes are well coated.
- Layer the sweet potato into a 10-inch (25cm) round skillet (or similar size) in a circular pattern and bake covered with aluminum foil for 30 minutes. Then remove from the oven and brush with the remaining 1 tablespoon of olive oil.
- Turn up the temperature to 430ยฐF (220ยฐC), remove the foil from the dish, and bake uncovered for a further 20 minutes. Serve hot.
