- 1 can(s) (15 oz / 425 g) chickpeas drained and rinsed
- ยฝ teaspoon(s) smoked or sweet paprika
- ยฝ teaspoon(s) ground turmeric
- 1 clove(s) garlic minced or pressed
- 3 tablespoon(s) plant-based milk (such as oat or soy)
- 1 tablespoon(s) harissa paste
- 2 slice(s) bread toasted (gluten-free if preferred)
- 1 ripe avocado sliced
- Squeeze of lemon juice to taste
- Salt and pepper to taste
- Optional garnish: sliced green onions
Instructions
- Sautรฉ the chickpeas: Heat 1 teaspoon of olive oil (or water for oil-free) in a skillet over medium heat. Add the drained chickpeas, paprika, turmeric, and garlic. Season with salt and pepper. Cook for 4 to 5 minutes, stirring occasionally, until the chickpeas are golden and sizzling.
- Add flavor and mash: Stir in the plant-based milk and harissa paste. Let simmer for 3 to 4 minutes, lightly mashing some of the chickpeas with a fork or the back of a spoon to create a creamy texture. Taste and adjust seasoning as needed.
- Assemble and serve: Spoon the warm chickpeas over toasted bread. Top with avocado slices, a squeeze of lemon juice, and optional green onions. Serve immediately.
