Smashed Avocado & Tofu Bacon Sandwich

Ingredients
  • 1 avocado
  • 2 green onions finely sliced
  • 1/4 teaspoon(s) salt
  • 1/8 teaspoon(s) black pepper
  • 1/2 teaspoon(s) lemon juice
  • 4 slices bread of choice toasted (gluten-free if preferred)
  • 1 handful(s) baby spinach
  • 4 radishes sliced
  • 8 strips Tofu Bacon (homemade or store-bought)
Instructions
  • Place avocado in a bowl and mash with a fork until smooth. Stir in green onions, salt, pepper, and lemon juice to taste.
  • Cook the tofu bacon according to the recipe or package instructions.
  • Toast four slices of bread. Take two pieces of toast and spread smashed avocado on each slice, then add radishes, 4 tofu bacon strips per sandwich, and baby spinach. Top each with another slice of toasted bread and enjoy your sandwiches!
