Zesty Marinated Tofu Skewers with Hummus
Crispy, flavorful, and perfect for grilling season! These Zesty Marinated Tofu Skewers are savory, slightly spicy, and irresistibly satisfying. Marinated in a tangy-sweet tamari-lime sauce and grilled until golden and crisp, the tofu soaks up tons of flavor. Ingredients
- 14 oz extra-firm tofu drained and cut into 1-inch cubes
- ¾ cup(s) hummus for serving
For the Marinade:
- 2 tablespoon(s) soy sauce (gluten-free if preferred)
- 1 ½ tablespoon(s) lime juice
- 1 ½ tablespoon(s) Dijon mustard
- 1 ½ tablespoon(s) agave or maple syrup
- ¼ teaspoon(s) cayenne pepper (or to taste)
- ¾ teaspoon(s) garlic powder
- ¾ teaspoon(s) onion powder
- 1 tablespoon(s) olive oil optional, for richness and browning
Instructions
- Prep the skewers (if using wood): Soak wooden skewers in warm water for 20–30 minutes to prevent burning. Skip this step if using metal skewers.
- Make the marinade: In a jar or bowl, whisk together the soy sauce, lime juice, mustard, maple syrup, cayenne, garlic powder, onion powder, and olive oil (if using) until smooth and combined.
- Marinate the tofu: Transfer tofu cubes to a reusable bag or shallow container. Pour the marinade over the tofu and toss gently to coat. Marinate for at least 15 minutes at room temperature or up to 8 hours in the fridge, flipping occasionally.
- Skewer the tofu: Thread the marinated tofu cubes tightly onto the skewers. Reserve any extra marinade for basting.
- Grill the skewers: Preheat your grill to high or heat a skillet. Lightly oil a wire rack (or skillet). Arrange skewers on top cook 14–16 minutes, rotating every 4 minutes, until golden and crisp on the edges. Baste with reserved marinade as they cook.
- Serve: Remove from oven and serve hot with a generous scoop of hummus on the side. Garnish with chopped herbs or chili flakes if desired.
Notes
Oil-Free Option: Skip the olive oil. Just keep an eye on the tofu so it doesn’t dry out.
Add Veggies: Alternate tofu cubes with quick-cooking veggies like bell peppers, zucchini, or red onion for colorful skewers.
Storage: Leftover tofu skewers can be stored in an airtight container in the fridge for up to 3 days. Reheat in a skillet to maintain crispiness.
