  • 14 oz extra-firm tofu drained and cut into 1-inch cubes
  • ¾ cup(s) hummus for serving

  • Prep the skewers (if using wood): Soak wooden skewers in warm water for 20–30 minutes to prevent burning. Skip this step if using metal skewers.
  • Make the marinade: In a jar or bowl, whisk together the soy sauce, lime juice, mustard, maple syrup, cayenne, garlic powder, onion powder, and olive oil (if using) until smooth and combined.
  • Marinate the tofu: Transfer tofu cubes to a reusable bag or shallow container. Pour the marinade over the tofu and toss gently to coat. Marinate for at least 15 minutes at room temperature or up to 8 hours in the fridge, flipping occasionally.
  • Skewer the tofu: Thread the marinated tofu cubes tightly onto the skewers. Reserve any extra marinade for basting.
  • Grill the skewers: Preheat your grill to high or heat a skillet. Lightly oil a wire rack (or skillet). Arrange skewers on top cook 14–16 minutes, rotating every 4 minutes, until golden and crisp on the edges. Baste with reserved marinade as they cook.
  • Serve: Remove from oven and serve hot with a generous scoop of hummus on the side. Garnish with chopped herbs or chili flakes if desired.
Notes
Oil-Free Option: Skip the olive oil. Just keep an eye on the tofu so it doesn’t dry out. 
Add Veggies: Alternate tofu cubes with quick-cooking veggies like bell peppers, zucchini, or red onion for colorful skewers.
Storage: Leftover tofu skewers can be stored in an airtight container in the fridge for up to 3 days. Reheat in a skillet to maintain crispiness.
