  • Preheat the oven to 200°F (90°C). Line a baking sheet with parchment paper.
  • Place the dates in a food processor and pulse until chopped and a rough texture forms. Add the remaining ingredients and process for a minute, to form a crumbly dough.
  • On a clean work surface or a sheet of parchment paper, roll out into a 6" x 10.5” (15x25cm) rectangle, and cut the dough into 12 even-sized bars.
  • Place the bars on the prepared baking sheet and bake for 30 minutes, just to dry them out a little. Then remove from the oven and set on a wire rack to cool to room temperature before enjoying.
  • Store the bars in an airtight container, in the refrigerator, or freezer.
Notes
Pecan sub/ nut free: you can sub pecans with equal amounts of walnuts, cashews, sunflower seeds, or pepitas (pumpkin seeds)
