Cashew Tofu Stir Fry

Crispy tofu, crunchy cashews, are tossed in a delicious sauce and served with tender broccoli A great dinner or lunch, plus you can make it ahead of time, so it's perfect for busy days. Enjoy it right away or save some for later – it's a winner either way!

Ingredients
  • 1 12oz block(s) extra-firm tofu drained
  • 2 tablespoon(s) cornstarch
  • 2 tablespoon(s) light oil (such as canola or vegetable)
  • 1/2 cup(s) hoisin sauce (gluten-free if preferred)
  • 6 tablespoon(s) rice vinegar
  • 3 tablespoon(s) soy sauce (gluten-free if preferred)
  • 2 tablespoon(s) chili garlic sauce (also called sambal oelek) (or sub similar hot sauce) (reduce or omit for less spicy)
  • 3 tablespoon(s) sesame oil
  • 3 cloves garlic minced or pressed
  • 1 inch ginger minced or grated
  • 1/2 cup(s) roasted cashews
  • 4 green onions chopped
  • 1 head(s) broccoli cut into florets
Instructions
  • Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
  • Cut the tofu into cubes and toss in cornstarch, then in the light oil, and spread evenly on the prepared baking sheet. Cook in the hot oven for 25 minutes, until crispy.
  • While the tofu is cooking, steam the broccoli. Place the broccoli florets in a microwave-safe bowl, add a couple of tablespoons of water, cover with a microwave-safe plate, and microwave on high for 3-4 minutes, or until the broccoli is tender-crisp. Set aside. (Alternatively, you can steam the broccoli in a steamer basket over boiling water for 5 - 7 minutes).
  • Meanwhile, make the stir fry sauce by whisking together the hoisin sauce, rice vinegar, soy sauce, chili garlic sauce, sesame oil, garlic and ginger. Place in a medium pot and simmer over a medium-low heat until slightly thickened.
  • Add in the cooked tofu and cashews and cook for 5 minutes until the sauce thickens, and the tofu and cashews have warmed through.
  • Garnish with green onions and serve the stir fry on rice or noodles with the broccoli on the side.
Notes
For oil-free: omit the light oil and sub with vegetable broth or aquafaba. Omit the sesame oil.
