Ingredients
  • 1 bunch(es) fresh basil leaves (about 1 1/2 cups)
  • 2 clove(s) garlic
  • 1 tablespoon(s) red wine vinegar
  • 2 teaspoon(s) lemon juice (plus more to taste if needed)
  • 1/2 teaspoon(s) salt (plus more to taste if needed)
  • 1 cup(s) chopped walnuts divided
  • 1/2 cup(s) olive oil
  • 1 head broccoli cut into florets
  • 1 apple (any kind) sliced
Instructions
  • To make the pesto dressing: place the basil, garlic, red wine vinegar, lemon juice, salt, and 2/3 cup of the walnuts into a food processor or blender, and pulse until grainy, stopping to scrape the sides down as needed. Slowly pour in the olive oil while the food processor or blender is running to make the pesto dressing. Taste and add more salt or lemon juice if desired.
  • To a large bowl add the broccoli florets and with the pesto, and mix to combine. Now add the sliced apple and remaining walnuts to the bowl and stir to combine.
  • Serve immediately, or store in an airtight container in the refrigerator for up to 3 days.
Notes
Oil-free: to make oil-free omit the olive oil and instead sub plain vegan yogurt (such as almond or soy yogurt). Add all the pesto ingredients to the food processor and blend to make a creamy dressing. Some yogurts can be a bit sour or bitter so if needed add a teaspoon of sweetener such as agave.
Nut-free: for nut-free sub the walnuts for equal amounts of roasted sunflower seeds.
