Ingredients
  • 1 cup(s) rolled oats (gluten-free if preferred)
  • 3 cup(s) water
  • 2 tablespoon(s) maple syrup
  • 1 teaspoon(s) cinnamon
  • 4 large apples (any kind) tops sliced & insides hollowed
  • 1 tablespoon(s) vegan butter melted (omit for oil-free)
  • 1 tablespoon(s) brown sugar
  • 1 teaspoon(s) cinnamon
  • 2 tablespoon(s) dried cranberries (or raisins)
  • 2 tablespoon(s) pecans roughly chopped (omit for nut-free)
Instructions
  • Preheat the oven to 400°F (200°C).
  • Combine the rolled oats and water in a medium saucepan and place over medium-low heat. Stir the oats occasionally until creamy, then stir in the maple syrup and cinnamon.
  • Transfer the apples to a baking dish and brush the inside of each apple with vegan butter. Sprinkle over the coconut sugar and cinnamon, then spoon in the oatmeal. Place the dish into the hot oven and bake the apple for around 35 minutes until soft.
  • Serve the apples warm from the oven, topped with cranberries and pecans. It's also great topped with vegan yogurt or vegan ice cream for a nice dessert!
Notes
Oil-free: for oil-free simply omit the vegan butter.
